    I've got a new favorite quinoa salad recipe to share with you! I've made quite a few quinoa salads over the years, but this one takes the cake. It's light, crisp, and so tasty.

    Ingredients
      

    • 1 cup quinoa
    • 2 cups water
    • 1 cucumber diced
    • 1 cup cherry tomatoes halved
    • ¼ red onion finely diced
    • ½ cup feta cheese crumbled
    • 3 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 1 clove garlic minced
    • Salt and pepper to taste

    Instructions
     

    • Rinse quinoa. Bring quinoa and water to a boil in a saucepan. Reduce heat, cover, and simmer for 15 minutes. Let cool.
