Ingredients

cherry tomatoes

feta cheese
crumbled

olive oil

lemon juice

fresh herbs like parsley or mint

Instructions
Rinse quinoa. Bring quinoa and water to a boil in a saucepan. Reduce heat, cover, and simmer for 15 minutes. Let cool.
In a large bowl, combine cooled quinoa, cucumber, tomatoes, and red onion.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
Pour dressing over the salad and toss to combine.
Top with crumbled feta cheese and fresh herbs if using.
Notes
For best flavor, let the salad chill in the refrigerator for at least an hour before serving.
