medium potatoes
peeled and cubed

vegetable broth

mixed winter greens
kale, spinach, Swiss chard, chopped
Salt and pepper to taste
Lemon juice
optional
Instructions
Heat oil in a large pot. Sauté onion and garlic until soft.
Add potatoes and broth. Simmer until potatoes are tender, about 15 minutes.
Stir in chopped greens. Cook until wilted, about 5 minutes.
Blend soup until smooth. Season with salt, pepper, and lemon juice if desired.
