Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 medium potatoes peeled and cubed
  • 6 cups vegetable broth
  • 8 cups mixed winter greens kale, spinach, Swiss chard, chopped
  • Salt and pepper to taste
  • Lemon juice optional

Instructions
 

  • Heat oil in a large pot. Sauté onion and garlic until soft.
  • Add potatoes and broth. Simmer until potatoes are tender, about 15 minutes.
  • Stir in chopped greens. Cook until wilted, about 5 minutes.
  • Blend soup until smooth. Season with salt, pepper, and lemon juice if desired.
