Parmesan Truffle Fries

This is the best parmesan truffle fries recipe ever! Homemade French fries are finished with real truffle oil for amazing truffled fries!

Ingredients
  

  • 2 large russet potatoes
  • 1 quart oil for frying peanut or vegetable oil
  • 2 tablespoon truffle oil *see note below!
  • 1 tablespoon parmesan grated
  • 1 teas salt or salt to taste
  • 1 teas chopped parsley for garnish optional

Instructions
 

  • Wash the potatoes and cut them into even sized fries. They should be thin, but not matchstick sized.
  • Heat the oil in a pan or in a deep fryer until it reaches about 350° F and get ready to double fry the French fries (for extra crispiness)
  • With a slotted metal spoon, carefully add the fries to the hot oil allowing them to fry for about 6 minutes. Stir them every once in a while
  • Remove the fries onto a paper towel and let them sit there for about a minute. They will not be done at this point
  • Add the fries back into the hot oil and fry for another5-6 minutes or until golden brown
  • Remove the fries and let them drain on some paper towels
  • Immediately drizzle the truffle oil on top of the fries and add the salt and parmesan
  • Serve the fries while hot

Notes

*Make sure to use all natural and real truffle oil (see the article above).  If your ingredient label says "truffle flavor," be sure to use much less truffle oil on your fries.  Any sort of artificially flavored truffle oils will be much too strong, and requires a much smaller portion of use.
