Equipment

  • Large pot for cooking pasta
  • Colander
  • Large saucepan
  • Whisk
  • Grater
  • 9x13 inch baking dish

Ingredients
  

  • 1 pound elbow macaroni
  • ½ cup butter
  • ½ cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 4 cups sharp cheddar cheese grated
  • 2 cups gruyere cheese grated
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F. Cook macaroni in salted water until al dente. Drain and set aside.
  • In a large saucepan, melt butter over medium heat. Add flour and whisk for 1 minute.
  • Gradually add milk and cream, whisking constantly until mixture thickens.
  • Remove from heat. Stir in 3 cups cheddar and all the gruyere until melted. Season with salt and pepper.
  • Mix sauce with cooked pasta. Transfer to a greased 9x13 inch baking dish.
  • Top with remaining cheddar. Bake for 25-30 minutes until bubbly and golden.

Notes

Let stand for 5 minutes before serving for the sauce to set.
