butter

all-purpose flour

whole milk

heavy cream

sharp cheddar cheese
grated

cups
gruyere cheese
grated
Salt and pepper to taste
Instructions
Preheat the oven to 375°F. Cook macaroni in salted water until al dente. Drain and set aside.
In a large saucepan, melt butter over medium heat. Add flour and whisk for 1 minute.
Gradually add milk and cream, whisking constantly until mixture thickens.
Remove from heat. Stir in 3 cups cheddar and all the gruyere until melted. Season with salt and pepper.
Mix sauce with cooked pasta. Transfer to a greased 9x13 inch baking dish.
Top with remaining cheddar. Bake for 25-30 minutes until bubbly and golden.
Notes
Let stand for 5 minutes before serving for the sauce to set.
