fresh mussels*
cleaned

tablespoon
butter
2
cloves
garlic
minced
1
shallot
finely chopped
1 ½
cups
light beer
¼
cup
fresh parsley
chopped
Salt and pepper to taste
Instructions
Clean and debeard mussels, discarding any that are open and don't close when tapped.
In a large pot, melt butter over medium heat. Add garlic and shallots, cook until fragrant.
Pour in beer and bring to a simmer.
Add mussels, cover, and cook for 5-7 minutes until the mussels open.
Remove from heat, discard any unopened mussels.
Stir in parsley, salt, and pepper.
Serve hot with crusty bread.
Notes
Always make sure mussels are fresh and alive before cooking for safety.
