Mediterranean Lentil Soup With Swiss Chard

  • 1 cup Lentils I use brown
  • 6 cups Water divided
  • 3-4 Potatoes
  • ½ bunch Swiss Chard coarsely chopped (about 2-3 leaves)
  • 1 Onion
  • 2 teas Salt
  • 1 teas Pepper
  • 4 tbsp Olive oil
  • 1-2 Lemons


  • Bring the lentils to a boil in a large pot or dutch oven with 4 cups of water
  • Let is simmer for about 30 minutes
  • Meanwhile caramelize the onions
  • Finely dice the onions and saute them in olive oil until very dark and golden brown. As soon as they begin to clump together add 2 cups of water CAREFULLY (see video in post)
  • Add the diced potatoes and the caramelized onions, along with the spices to the lentils and simmer on medium heat until potatoes are soft (about 20-25 minutes)
  • Add the juice of one lemon and the chopped Swiss chard, turn heat off and let thee Swiss chard slightly wilt (about 3 minutes)
  • Serve with lemon wedges and Arabic or pita bread.
