Bring the lentils to a boil in a large pot or dutch oven with 4 cups of water
Let is simmer for about 30 minutes
Meanwhile caramelize the onions
Finely dice the onions and saute them in olive oil until very dark and golden brown. As soon as they begin to clump together add 2 cups of water CAREFULLY (see video in post)
Add the diced potatoes and the caramelized onions, along with the spices to the lentils and simmer on medium heat until potatoes are soft (about 20-25 minutes)
Add the juice of one lemon and the chopped Swiss chard, turn heat off and let thee Swiss chard slightly wilt (about 3 minutes)
Serve with lemon wedges and Arabic or pita bread.
